THE POWER OF SPICES

This is a rich and velvety dessert, infused with the aromatic flavours of Indian Chai Tea


1.5 cups cream
0.5 cups milk
1 packet gelatin
4 tablespoons sugar
4 cardamom pods, seeds removed
1 cinnamon stick
4 cloves
2 tea bags



Place all of the ingredients in a heavy based saucepan over medium heat, stirring
continuously to dissolve the geletin and sugar.


Remove from the heat, just before coming to a boil.


Pour through a fine sieve into individual dishes/ cups etc.


Cover with plastic wrap, taking care not to let it touch the surface of the dessert and allow the mixture to cool down. Refrigerate until set.


Serve, topped with freshly whipped cream or fresh berries etc.
