Cloves

Cloves are the unopened flower bud of the evergreen Syzygium aromaticum tree.  The name comes from the French word ‘clou’ (nail).  The plant is native to Indonesia and is also grown in India and Sri Lanka.

This spice has a rich, complex flavour and scent; it is sweet, yet spicy and brings a zest to baked goods, stews, curries, compotes and pickles.

Keep cloves stored in an airtight container, whole if possible, as grinding will release the essential oils.  To extend their life, store in the fridge or freezer

A test to see if your cloves are fresh:
Place a clove in a cup of water – if it floats vertically, it’s fresh; if it floats horizontally, it is stale and should be replaced.
